National Food Safety Standard for Animal Aquatic Products 1 Scope This standard is applicable to animal aquatic products. 2 Terms and Definitions 2.1 Animal derived aquatic products are aquatic products made from fresh or frozen animal derived aquatic products as the main raw materials, with or without additives, and processed through corresponding processes. They include ready-to-eat animal derived aquatic products, prefabricated animal derived aquatic products, and other animal derived aquatic products, but do not include canned animal derived aquatic products. 2.2 Instant animal derived aquatic products that can be consumed directly without further heat treatment, including instant raw animal derived aquatic products and cooked animal derived aquatic products. 2.2.1 Ready to eat raw animal based aquatic products, which are made from fresh or frozen animal based aquatic products and can be consumed directly without heating before consumption, including pickled raw animal based aquatic products and ready to eat raw animal based aquatic products. 2.2.1.1 Pickled raw food animal based aquatic products are made from live mud snails, shellfish, freshwater crabs, fresh or frozen sea crabs, fish roes, and other animal based aquatic products as raw materials. They are directly edible pickled products made by processing them with salt, grains, or alcohol. 2.2.1.2 Ready to eat animal based aquatic products made from fresh, live, refrigerated, frozen fish, crustaceans, shellfish, cephalopods, and other animal based aquatic products that have been cleaned and processed without being pickled or cooked and can be consumed directly
