The "Regulations on the Quality Grading of Livestock and Poultry Meat" is a national standard of the People's Republic of China implemented on June 1, 2022, under the jurisdiction of the National Slaughtering and Processing Standardization Technical Committee. The national standard "Regulations on the Quality Grading of Livestock and Poultry Meat" (GB/T 40945-2021) specifies the terms and definitions, preparation before grading, grading evaluation, labeling, and recording requirements for the quality grading of livestock and poultry meat. This standard is applicable to the quality grading of pig, cow, sheep, chicken, duck carcasses and their segmented meat. Since 1988, China has successively formulated and released quality grading standards for pigs, cows, sheep, chickens, ducks, and geese. However, the quality grading standards and grading index testing methods for Chinese livestock and poultry meat processing products are not unified, resulting in a significant disconnect between the grading of livestock and poultry meat products and market demand. In order to better regulate the quality grading of livestock and poultry meat, based on research and comparative analysis of the grading standards and indicator detection methods in relevant livestock and poultry meat quality grading standards and technical regulations, the "Regulations on the Quality Grading of Livestock and Poultry Meat" has been formulated. On January 24, 2014, the national standard plan "Regulations on the Quality Classification of Livestock and Poultry Meat" (20131339-T-322) was issued, with a project period of 24 months. It was proposed and supervised by the Ministry of Agriculture and Rural Affairs of the People's Republic of China, and implemented and centralized by the National Slaughtering and Processing Standardization Technical Committee. On November 26, 2021, the national standard "Regulations on the Quality Classification of Livestock and Poultry Meat" (GB/T 40945-2021) was approved and released by the State Administration for Market Regulation of the People's Republic of China and the National Standardization Administration of the People's Republic of China. On June 1, 2022, the national standard "Regulations on the Quality Classification of Livestock and Poultry Meat" (GB/T 40945-2021) was implemented
