1) Total bacterial count: The total bacterial count refers to the total number of bacterial colonies generated in a food sample after being cultured under strictly prescribed conditions (sample processing, culture medium and its pH value, culture temperature and time, counting method, etc.), in terms of unit weight (g), volume (mL), or surface area (cm)

2) Escherichia coli group: The Escherichia genus, Citrobacter genus, Enterobacterium genus, and Klebsiella genus in the Enterobacteriaceae family are collectively referred to as the Escherichia coli group. They all come from the intestines of humans or warm-blooded animals, do not form spores, and are Gram negative bacteria that ferment lactose to produce acid and gas under conditions of 35-37 ℃. These bacteria are common bacteria that reside in the intestines of humans and warm-blooded animals, and are excreted from the body with bowel movements. If the number of coliforms in food is higher, it indicates that the food is more contaminated with feces. Therefore, using coliform bacteria as a hygiene indicator for fecal contaminated food to evaluate the quality of food has broad significance

3) Pathogenic bacteria: Pathogenic bacteria are bacteria that can cause people to develop diseases. When the coliform group test is positive and it is suspected that the food may be contaminated with pathogenic bacteria, a pathogenic bacteria test can be conducted. In the existing national standards in China, pathogenic bacteria generally refer to "intestinal pathogenic bacteria and pathogenic cocci", mainly including four types: Salmonella, Shigella, Staphylococcus aureus, and pathogenic streptococcus. Pathogenic bacteria are not allowed to be detected in food

4) Fungi and their toxins: China has not yet developed specific indicators for molds. Given that many molds can produce toxins, causing food poisoning and other diseases, it is necessary to test the producing molds. Such as Aspergillus flavus and parasitic Aspergillus in the Aspergillus genus, Penicillium citri and Penicillium islandii in the Penicillium genus, and Fusarium moniliforme and Fusarium graminearum in the Fusarium genus

5) Other indicators: Microbial indicators should also include viruses, such as hepatitis virus, swine fever virus, chicken Newcastle disease virus, Mazhike's virus, foot-and-mouth disease virus, rabies virus, pig blister virus, etc; In addition, from the perspective of food inspection, parasites have also been listed as indicators for microbiological testing by many scholars, such as trichinella spiralis, cysticercus, pork spore worms, roundworms, lung flukes, toxoplasma gondii, mites, ginger flukes, and clonorchis sinensis
