Food sensory quality testing

This standard specifies the general principles and testing methods for sensory evaluation of food color by visual comparison with standard colors. This standard applies to opaque, semi transparent, turbid, transparent, matte, and glossy solid, semi solid, powder, and liquid foods. This standard provides the evaluation and lighting conditions requirements for various situations in sensory analysis, such as evaluation groups composed of preferred evaluators or difference testing, profile analysis, and grading methods conducted by independent experts in specific situations. This standard also defines some terms, as detailed in Appendix B. 4 Inspection conditions 4.1 General color evaluation should be conducted in a suitable place with strict control over lighting conditions (such as lighting type, level, direction), surrounding environment, and geometric conditions (such as the relative position of the light source, sample, and eyes). The ideal evaluation venue should be a standard light source box designed specifically for color matching. When the accuracy requirements for color evaluation are not high, or there is no standard light source box, or when the standard light source box is not suitable for inspection samples, the evaluation can be conducted in the evaluation room or open space. 4.2 The testing room should comply with the design requirements of the sensory analysis laboratory specified in GB/T 13868
